In a large mixing bowl, mash the ripe bananas with a fork. Stir in the melted gluten-free vegan butter.
Whisk together the eggs and sugar until well combined. Add this mixture to the bananas.
If using, chop the strawberries finely and add them to the banana mixture along with the gluten-free chocolate chips.
Add the baking soda, gluten-free all-purpose flour, and gluten-free baking powder. Mix until just combined.
Finally, add the gluten-free vanilla extract and cinnamon. Mix until smooth.
Transfer the batter to a greased 9x5-inch loaf pan. Bake in a preheated oven at 350°F (180°C) for 40-45 minutes, or until a toothpick inserted into the center comes out clean. (Also, add nuts for topping if you prefer.)
Allow the bread to cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack before slicing.
Enjoy your delicious, gluten-free Americanized Banana Bread!
Notes
Make sure to use ripe bananas for optimal sweetness.
Allow the bread to cool completely before slicing to prevent it from crumbling.
Feel free to add in other gluten-free mix-ins like nuts or dried fruits.
