When you have coeliac disease, like me, finding a tasty gluten-free bread can be a tall order. We’ve all been there: biting into a piece of gluten-free bread only to be met with a texture that’s more akin to cardboard than to a soft, fluffy loaf. That’s why I took it upon myself to perfect this banana bread recipe—because everyone deserves delicious bread, whether you can eat gluten or not!
Why This Gluten-Free Banana Bread Stands Out
- Deliciously Moist: One of the key struggles with gluten-free bread is getting that moist, rich texture we all crave. But with the ripe bananas and a perfect blend of gluten-free flours, this bread hits the mark!
- Easy and Quick: This is a simple one-bowl recipe. You mix the wet and dry ingredients separately, combine them, and voila! Your batter is ready to go into the oven.
- Nutrition Boost: Aside from being gluten-free, this banana bread also has a good amount of fiber and essential nutrients, thanks to the bananas and optional add-ins like nuts or seeds.
Alright, folks! If you’re craving a banana bread that’s not just delicious but also gluten-free, then you’re in for a treat. I’ve taken this traditional recipe and given it a unique American twist that caters to those who need to avoid gluten. - 1.5 cup gluten-free all-purpose flour
- 1 packet gluten-free vanilla extract
- 1 tsp gluten-free baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- 5 pcs large strawberries (optional)
- 1 tbsp gluten-free chocolate chips (optional)
- crushed nuts (optional)
Instructions
- In a large mixing bowl, mash the ripe bananas with a fork. Stir in the melted gluten-free vegan butter.
- Whisk together the eggs and sugar until well combined. Add this mixture to the bananas.
- If using, chop the strawberries finely and add them to the banana mixture along with the gluten-free chocolate chips.
- Add the baking soda, gluten-free all-purpose flour, and gluten-free baking powder. Mix until just combined.
- Finally, add the gluten-free vanilla extract and cinnamon. Mix until smooth.
- Transfer the batter to a greased 9×5-inch loaf pan. Bake in a preheated oven at 350°F (180°C) for 40-45 minutes, or until a toothpick inserted into the center comes out clean. (Also, add nuts for topping if you prefer.)
- Allow the bread to cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack before slicing.
- Enjoy your delicious, gluten-free Americanized Banana Bread!
Notes
- Make sure to use ripe bananas for optimal sweetness.
- Allow the bread to cool completely before slicing to prevent it from crumbling.
- Feel free to add in other gluten-free mix-ins like nuts or dried fruits.

What Goes Best with Gluten-Free Banana Bread?
After you’ve enjoyed making this delightful banana bread, you might be wondering, “What should I pair with it?” The options are endless, but here are a few of my favorites:
- Almond or Cashew Butter: A spread of almond or cashew butter can take your banana bread to the next level. It complements the nutty undertones in the bread and adds a layer of richness.
- Fresh Berries: A handful of fresh blueberries, strawberries, or raspberries can add a burst of flavor and color, making your treat even more enjoyable.
- Coconut Yogurt: If you’re looking for a dairy-free option, coconut yogurt can add a tangy, creamy texture that contrasts beautifully with the sweetness of the banana bread.
- Hot Cup of Coffee or Tea: Let’s not forget a classic pairing—a hot cup of your favorite coffee or herbal tea can make your banana bread experience even more delightful.
