Gluten-free cupcakes work well in an air fryer when the batch is small and the cupcakes are watched closely. The air fryer heats faster than an oven and air-circulates around each cupcake, so the texture comes out soft and the tops dome neatly.
This is a simple, small-batch recipe. The crumb is light, the cupcakes are sturdy enough to glaze or frost, and the batter works for any flavour variation you like.

Why an air fryer works for gluten-free cupcakes
Gluten-free batters benefit from quick, even heat. An air fryer reaches temperature fast and circulates air around the liners, which helps the rise set before the crumb has time to dry out.
Because air fryers are small, batches are small — usually 4–6 cupcakes at a time. That actually helps with gluten-free baking: the batter goes from bowl to heat quickly, and the texture stays consistent.
Ingredient notes
Gluten-free flour: a 1:1 gluten-free flour blend with xanthan gum gives the closest crumb to traditional cupcakes. Almond flour alone produces a denser, more cake-like result.
Eggs: use room-temperature eggs — they whip in more air, which gives a lighter rise.
Butter or oil: butter gives more flavour; oil gives a slightly more tender crumb. Either works.
Baking powder: check the label for gluten-free certification if needed. Some brands use wheat starch.
How to make air fryer cupcakes (in short)
Cream butter and sugar, beat in eggs one at a time, fold in the dry ingredients alternating with the milk. Spoon into lined cups, filling each about two-thirds full. Air-fry at 160°C / 320°F for 12–14 minutes, checking with a skewer.
See the recipe card above for full measurements and the step-by-step instructions.
Air fryer cupcake tips
Don't over-fill: two-thirds full is the sweet spot. Any more and the cupcakes dome over the liner; any less and they look hollow.
Rotate the basket halfway: air fryers blow hot air directly from the top, which can over-brown one side. A 180° rotation at the 6-minute mark evens it out.
Test at 11 minutes: air fryers vary. A skewer in the centre should come out clean or with a couple of crumbs — not wet batter.
Cool in the basket for 2 minutes: moving them too soon collapses the rise.
How to store gluten-free cupcakes
Counter: in an airtight container, 2 days. Don't refrigerate plain — the crumb dries.
Fridge: if frosted with a dairy-based frosting, store in the fridge for up to 4 days. Bring to room temperature for 20 minutes before serving.
Freezer: unfrosted cupcakes freeze well for 1 month. Wrap individually and thaw at room temperature.

FAQ
Frequently asked questions
Can you bake cupcakes in an air fryer?
Yes — small batches work well. The air fryer heats faster than an oven, so check the cupcakes a few minutes earlier than a conventional recipe would say.
Why are my air fryer cupcakes domed unevenly?
Air fryers blow hot air directly over the top, which can over-brown one side. Rotate the basket halfway through, and don't over-fill the liners.
What gluten-free flour works best for cupcakes?
A 1:1 gluten-free flour blend with xanthan gum gives the closest crumb to traditional cupcakes. Almond flour alone produces a denser, moister cupcake.
Can I make these cupcakes dairy-free?
Yes — swap butter for the same weight of a neutral oil or vegan butter, and use plant milk. The texture stays soft.
